We finished up in Bolinas, Ca. at Bill Niman’s ranch. He left Niman Ranch Foods over animal husbandry disagreements and now he has a new beef company called BN. His ranch and Bolinas in general are a paradise. We went with him to deliver some cattle from the ranch to some irrigated fields in the valley east of SF to eat an ocean of clover. These cows have it a lot better than most. The work these guys did was so sophisticated and so traditional at the same time. This is something guys from NYC never see. The nature was all so spectacular. We ate some great food and hung out with Bill, his family, and a group of cowboys, it was great. Here are the guys in the process of weighing and tagging the cows before the move.
